For a mouthwatering and hassle-free dinner, look no further than our Pan-Seared Beef Roast with Oven-Baked Onions, Potatoes, and Carrots, finished with a delectable garlic butter glaze.

This “start it and leave it” menu is perfect for those busy days when you’re working late but still crave a comforting and flavorful meal.

Ingredients:

  • 2-pound beef roast (such as sirloin or chuck)
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 3-4 medium-sized potatoes, cut into chunks
  • 3-4 carrots, peeled and cut into chunks
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef roast generously with salt and pepper on all sides.
  3. In a large cast-iron pan or oven-safe skillet or roasting pan, heat the vegetable oil over medium-high heat.
  4. Once the oil is hot, sear the beef roast on all sides until a golden-brown crust forms. This helps to seal in the flavors and keep the meat juicy.
  5. Remove the beef roast from the skillet and set it aside.
  6. In the same skillet, add the sliced onions and cook them for a few minutes until they become translucent and slightly caramelized.
  7. Add the potato and carrot chunks to the skillet, tossing them with the onions to coat them in the flavorful drippings.
  8. Place the seared beef roast on top of the vegetable mixture in the skillet.
  9. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
  10. Let the beef roast and vegetables cook in the oven for about 1 to 1.5 hours, or until the meat reaches your desired level of doneness and the vegetables are tender.
  11. While the beef roast is cooking, prepare the garlic butter glaze. In a small saucepan, melt the butter over low heat and add the minced garlic. Cook for a minute or two until the garlic becomes fragrant. Set the garlic butter aside.
  12. Once the beef roast and vegetables are done, remove the skillet from the oven.
  13. Pour the garlic butter glaze over the beef roast, ensuring it is evenly coated.
  14. Garnish with fresh thyme or rosemary, if desired, for an extra burst of flavor.

Apple Pie is the epitome of a timeless and comforting dessert that has been cherished for generations. Ingredients:

  • 6 cups of thinly sliced apples (8x Granny Smith)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 package (14 ounces) refrigerated pie crusts or homemade pie crusts
